Piri Piri is a hot chili pepper spice, which adds a range of savoury and spicy flavours to this cheddar. One pairing strategy is to complement these flavours with a hoppy, bold IPA (India Pale Ale). This quality is not for everyone, as it pretty much amplifies all of the spice and herbal flavours, increasing the heat into a flavour explosion in the mouth. Not for the faint of heart!
